If you haven't heard, we decided to ditch the grocery shopping this week in an attempt to save money, eat better, and empty out the kitchen of previously hoarded food items. Day one was easy as assumed. Here's what we ate:
Breakfast
Oatmeal, peaches, applesauce
Sanck
Green smoothie - made with frozen Green Goodness smoothie and water blended
Lunch
Tuna sandwich with mayo, relish and tomatoes, watermelon
Snack
Cheese, homemade granola bars, popcorn
Dinner
Spaghetti with meat sauce, roll, watermelon
Recipe - Making fresh spaghetti sauce so easy and only takes as long as boiling water and cooking noodles. The ingredients can change to suit your tastes. Here's my basic recipe with the ingredients I used tonight:
Brown ground beef in large pot
Add in veggies - onion, garlic, tomatoes, carrots, orkra, green sweet pepper (the options are endless, however, the first four are recommended)
Saute until fragrant and crisp tender
Add tomato sauce, beef stock and/or water until desired saucy-ness is reached
Simmer until noodles are ready
**variation** This can be made as a one-pot dinner. Just add extra water and noodles. Bring back to a boil and let the extra water boil out until sauce is desired thickness.
